Happy Birthday Kay!

My fabulous co-stylist at the VA hospital had a birthday. She blows my mind.... she's still working like a kid at age 83. That's what keeps people young! ... and I can't wait until I am 83 and can get away with everything! Kay will say something smart assed and everyone giggles and then I could say the exact same thing and we would hear crickets (a quiet cough, someone clears thier throat). Heehee it's quite baffling to me.
Kay is SO special to me! We have way too much fun with each other! She makes me laugh so hard. I learn so much from her and I am a better woman for knowing her.

I made this cake for her birthday and it was really good so I decided to post the recipe if anyone wants to make it. It's a chocolate cake with peanut butter chocolate frosting. Yum yum!


Chocolate Peanut Butter Cake
Preheat oven to 350
Cake:
2 C flour
2 C sugar
3/4 C baking cocoa
2 tsp soda
1 tsp baking powder
1 tsp salt
1 C oil
1 C brewed coffee (room temp)
1 C milk
2 eggs
3 TBL vanilla
In a large bowl whisk together all dry ingredients. Add oil, coffee and milk then beat at medium speed for 2 minutes. Add eggs and vanilla and beat 2 minutes more( batter will be thin). Pour into greased 9x13 cake pan and bake for 30-40 minutes until toothpick or knife comes out clean.
Frosting:
1 pkg cream cheese
1/2 stick of butter
1/2 C creamy peanut butter
3 C powdered sugar
4 TBL baking cocoa
2 TBL milk
1/2 tsp vanilla
8 reeses peanut butter cups cut up into pieces (for decoration)
Cream together cheese, butter and peanut butter then add all remaining ingredients. Store in fridge until cake is cooled and ready to frost. After frosting cake sprinkle candy around the sides or as you desire. Store cake in fridge if there is any left over.
